june: eating

While I don't consider us to be truly seasonal eaters, we do tend to go in spurts of what we are eating. Do you do that also? Here's some of the happenings in our kitchen lately...

blueberry pancakes for breakfast, lunch and dinner

swedish pancakes with my new plett pan

bowtie pasta salad with veggies and smoked salmon

flank steak: grilled or broiled depending on the weather, leftovers added to salads for lunch

roasted beets in a salad of spinach, goat cheese and pine nuts

black bean, corn, red pepper and feta side dish


blueberries and lemon noosa yogurt

spinach pesto fusilli (i want to fiddle with this recipe and add some basil)


spinach-strawberry-avocado salad with honey dressing

banana chocolate chip muffins for the freezer

chia puddings

homemade protein bars (adapted from this recipe)

A Day in Life - On My Own

I haven't documented a day in my life in awhile and thought it might be fun to do a day sans family and most other life responsibilities. Matt has had the kids in Austin for a long weekend. While I've loved my time alone, I can't wait to hug my babies this evening. So here's what I do when left to my own devices...

6:55am woke up on my own
stayed in bed and caught up on some blog reading
got up, let dogs out (all three - dog sitting right now)
fed chickens and watered garden
put on running clothes and brushed teeth
made a pan of Swedish pancakes (batter in fridge from yesterday)
fed 2 dogs
took Tripper on a run
arrived back home, let other dogs outside, fed Tripper
pitted a large bowl of cherries while listening to audiobook
ate that large bowl of cherries - yum!
showered quickly
raced around putting dogs in their places and gathering my stuff
attended my first ever barre class (I almost fainted!)
talked to a friend on the way to Target
leisurely shopped at Target while texting Matt
arrived home, let out dogs, gathered mail
paid a couple bills
ate a homemade protein bar while listening to my audiobook
napped on the couch
unloaded Target purchases and clean kitchen
ate a spinach and roasted beet salad for a late lunch
aimlessly walked around the house mentally listing to-do projects
pitted and ate more cherries
worked on piecing a quilt
took a leisurely walk with a friend and dogs
talked with a neighbor walking by
made and ate more swedish pancakes
fed dogs
played tennis with my team
filled gas tank
facetimed Jack
watched HBO Now
10:45pm let dogs out, got in bed, went straight to sleep

Antique-ish Quilt

Kate's good friend Marissa moved to Florida this week. Since this friend always looked longingly at my sewing room, I decided to make her a quilt as a going away present. She prefers old fashion/antique items to new/modern ones, so I attempted to make this quilt look like it came from an older time period. I used several charm packs that I had from a monthly charm club a few years back. Thought the prints were perfect for a simple patchwork. Backing is new but looks like blue ticking. Bound in yellow solid from my stash. Should have measured it, but it must be about 50"x63"

This Makes Me Happy - Gardening

For various reasons (travel, chickens, etc) I haven't done much gardening the last few summers. I wasn't going to plant this summer either but decided I'd like a few herbs. Then Jack wanted a pumpkin plant, and I threw in a couple zucchini plants. Now we have a nice, little, very manageable garden planted!
I had forgotten how much I like getting my hands in the dirt!
