Monday Menu Plan

I enjoyed not cooking last week but that doesn't mean we quit eating! We are going to have some of our healthiest meals this week to counteract some of the not-so-healthy eating we did last week (I ate FIVE of Aunt Evva's Denver biscuits in one sitting - yum!).

Monday - Last day to enjoy Mom's home cookin'
Tuesday - EV's Veggies per Matt's request
Wednesday - Quick Barley Vegetable Pilaf
Thursday - Kids' meal - baked chicken, baked butternut squash, drop biscuits
Friday - Homemade pizza (using my favorite whole wheat dough recipe) and a great big fresh salad

I have to say, I have often looked up your menu plan Monday posts when I'm writing out my menu/shopping list for the week. I think we have similar tastes in food and I appreciate the great recipes you've shared. I plan on trying the EV veggies- sounds yummy. Thanks for sharing.
